This church is located near the humanist library founded in 1452 by Jean de Westhuss, priest at Saint George's Church. First dedicated to the Virgin Mary, the church is known by the name of Saint George only since 1500. At the site of the church in the 8th century a Carolingian baptismal chapel formed part of an imperial set built by Charlemagne. The latter came to meditate there at Christmas time in the year 775.

Located on the site of an old 13th-century Romanesque church, the current church is a Gothic reconstruction. The building was handed over to the Dominicans by King Ferdinand II in 1625. The 17th-century Baroque interior is now the site of classical concerts.

The Saint-Gimer Church is located in the Barbacane district at the foot of the city. Deified in the 19th century, from 1854 to 1859, by Viollet-Le-Duc in the center of the ancient Barbican of Aude, the Church owes its name to Saint Gimer, Bishop of Carcassonne from 902 to 931 who was known for his charity towards the poor. Its architecture, characterized by the Gothic vision of the famous architect, encloses the furniture from the early church.
